Confessional Friday: Part II

It's that time of the week again! I can't believe it's already Friday. Not that I'm complaining, I just don't know where the week went! Here are my confessions for this week!

1) I confess I'm stressing about Saturday.
I'm taking the MPRE (Multi-State Professional Responsibility Exam) on Saturday morning in Omaha. Basically, I have to pass this exam, along with the Bar, to practice law after graduation. It's based on the Model Rules lawyers have to abide by for ethics, duties, and other items. I can take it again if I don't pass the first time with out repercussions, which is a good thing, but I'd much rather not have to worry about it again. Today and tonight are going to be filled with studying, so hopefully I'll still be able to wake up on time to make it to Omaha!

2) I confess that Archie's training is going well.
As I mentioned awhile back (here), we've been taking Archie to obedience classes once a week now for the past month. We've worked on sit, lay down, sit-stay, down-stay, leave it, loose leash walking, and "come"! He's been doing much better at listening and I can tell he remembers most of the commands when we practice at home. However, sometimes I think his stubborn-ness gets the best of him and he doesn't want to listen if he knows there's no treat coming. Now if we can just get that barking fixed...

3) I confess my new love of crocheting.
If crocheting my heart out like an 80 year old woman is wrong, I don't want to be right. I've been going crazy learning new stitches, trying new patterns, and searching out patterns I want to try in the future. Having something to sit down and do at the end of the night that's pretty mindless is super relaxing. I have a few projects that I'm pretty proud of that I will probably blog about later! Here is the project I am planning next!

Quick and Easy Chunky Winter Headband

4) I confess my sister's visit last weekend was awesome!
Kacie came into town last weekend and we had a great time. We went to the Husker game on Saturday and it was a blast! The Huskers won and I got a little color from being in the sun all afternoon. What more can you ask for!? After the game we headed down to the Railyard for a few drinks and met up with my friend Molly. It was great to see her and her family and catch up about what's been going on in our lives! We ended the night with some sushi at Dozo which was delicious. After BisonWitches on Sunday, she started the drive back to Oklahoma. I can't wait to see her at Thanksgiving...only a month away!

5) I confess I'm starting to think about Christmas waaaaaaay too soon this year.
Speaking of holidays, I usually try not to even think about Christmas until after Thanksgiving, but there is something about this year that I can't help it. While Kacie was here we had her take some family pictures of Justin, myself, and the dogs, so I've been looking at Christmas card options using those pictures. I also already have my wrapping paper and theme picked out for this year (inspiration below). I also can't stop myself from pinning holiday drinks and goodies. Every year, I try to make a Christmas cookie platter for my family, Justin's mom and dad, and his brother and sister. This year I think I'm also going to include one for our neighbors! Because of that, I've been planning which cookies and treats I'll be making this year. Pinterest is so terrible great for this...so many ideas! As you can tell, I'm really excited and it's still two months away!

6) I confess I've been pretty adventurous in the kitchen lately.
I pin so many recipe ideas, but it seems like I never get around to trying any of them. This past weekend, I made some pumpkin cream cheese bread. Yes, it was as good as it sounds. I've got a post in the works with the recipe and my review! Also, on Wednesday Justin requested a casserole-type dish for dinner. After looking on my boards, I came up with a taco bake. Noodles, meat, cheese...it was pretty good. I'm also planning a post with a review of this recipe later! I enjoy actually making something that requires a little work instead of resorting to Hamburger Helper or boxed cake mix. It gives me a sense of accomplishment! =)

That's all for now. I hope everyone has a fantastic weekend and please pray for me as I take this test tomorrow! =)

Thanks for reading,
-Emily

Confessional Friday

I've been lacking ideas for posts lately; we haven't had much going on, which is actually a pretty nice change. Anyway, I've been thinking about doing something like this post for awhile now after seeing it on a few other blogs. Basically, every Friday I will post a few "confessions". It will be a way to get those random things off my chest that have been on my mind, but that don't warrant an entire post by themselves. In doing this, I will be linking up with other blogs participating in this activity, and will have the option on my post for others to link up on mine. So, if you read my blog and have a blog of your own, feel free to link up! So, here we go...

1) I confess that I'm super happy that my sister is visiting from Oklahoma this weekend!
Kacie is on Fall Break this weekend from her graduate program at Oklahoma State University. I haven't seen her since I went down for a visit in mid-September. I know, it doesn't seem like that long ago, but after living in the same city for all but two years of our lives, not seeing her for a month is very strange.

We're planning to go to the Husker football game tomorrow and hopefully grab some sushi tomorrow night! I know she'll have to leave early Sunday to make that 6 hour drive back to Stillwater, but hopefully we'll be able to do something fun before she has to leave. I won't be seeing her for another month (Thanksgiving) so I need to get in as much sister time as possible!

2) I confess that I just got my hair revamped for fall...and I LOVE it.
Cate, one of my friend's since middle school, is an amazing hairstylist and always knows what will look the best. She did my hair for my wedding and it was perfect. Kacie had planned on getting her hair done while she was back in town, so I thought it was time for a change for me as well.

I considered cutting it super short, but chickened out after thinking about it for awhile. I did chop a good six inches off however, and it just feels so much healthier. For the color, I wanted to go a little darker and red-ish for fall and I think it turned out perfectly!

It looks so different in outdoor light vs. indoor...so perfect!

3) I confess that Justin and I just booked a trip to Detroit!
I'm so so so excited because Justin and I just booked a trip to go visit my best friend Emily in Detroit. She recently moved there with her boyfriend and I haven't seen her since Molly's wedding back in September. We're leaving right after I get done with finals for the semester, so it will be a much needed get away that I'm really looking forward to. I'm excited to see all of her favorite parts of her new city and it will be so good to catch up in person!

4) I confess that I really love party planning.
You would think that after planning a wedding I would be party-planned-out for awhile. But I couldn't stay away! When Mallory's (my sister-in-law) sister asked me to help throw Mallory's baby shower, I said yes right away. Since then, we've been busy coming up with fun game ideas, getting the invites made, and working on decorations. There's a lot to think about, but with the two of us, I think we are getting it done in a timely matter. My next task is to get some suckers for party favors and put some sort of label on them that says, "Look who's ready to pop...Thanks for coming!" Here are those, as well as some other elements we are working on. Click on the captions to find the original sources!
Cute backdrop...yellow and grey of course!

Party favors!

5) I confess that I realized today how much the morning can make or break your day.
The past couple of mornings have been pretty rough. It seems like no matter what time we put Archie in "bed" for the night, he wakes up at 7AM barking like his life depends on it. Justin and I have been pretty good about taking turns going to let him out, feeding him, and playing with him a bit before he gets tired again. But this morning was one of those mornings when nothing would go right. It started with the barking, then he had an accident on the floor, then I couldn't find the match to my shoe, then my contacts were scratching my eyes, and I felt like I was running late to my hair appointment.

Looking back, I realize if I would have taken the time to play with Archie, maybe taken him on a walk, I could have "reset" my day and probably avoided all the other things that irritated me. Guess I'll know for next time!

There you have it, my "confessions"! I'm happy I was able to get a post together finally. I'm off to enjoy the rest of my Friday evening, cleaning the house, studying, and maybe enjoying a glass of wine. I hope you enjoy yours!

Link up if you would like!

Our Nine Year Anniversary: A Look Back

I'm sure most people reading this have a pretty good idea of Justin's and my story, but I think it's a pretty amazing one! In honor of our nine year dating anniversary today, I've decided to take a look back and write down some of our milestones, favorite memories, and anything else that comes to mind.

The Dating Years
We started dating on October 12, 2005. Having only hung out together a couple of times, and never alone, it all happened really fast. I had been talking to our friend Drew online and he thought Justin and I would be a good match, but I kind of told him I wanted to get to know Justin a little better before we started dating. Well, before you know it I get a phone call from Drew while I was at Alexa's house before Youth Leadership Council. I talked to Drew a bit before he said Justin wanted to talk to me. Before you knew it, he was asking me out, and I was saying yes (I think because I was too nice to say "no"). I hung up and said to Alexa "I think I have a boyfriend." She was super surprised (as was I) and that was that.
The prom that saved our relationship =)

The first year of our relationship was a little rough. We didn't really know each other so we barely talked...especially at school. We would see each other in the halls and only say "hi". I think we were both really shy as well so that didn't help. I thought about breaking up with him because I didn't know if it would work, but he was a senior and I wanted to go to prom (yes, that was so shallow of me). Obviously, I'm glad my shallowness got the better of me and we stayed together. =)

The next two years had challenges of their own. Justin graduated high school and went off to college. We had talked a lot about whether we were going to try and make the long distance relationship work and we decided that we cared enough about each other to give it a shot. (Also, both of us were probably too nice to end it.)

We spent the time talking on the phone a lot, texting, and driving back and forth to Lincoln to visit each other. Justin was a good sport and would accompany me to homecomings and proms, even though he was usually one of the oldest people there.

One of my favorite memories from this time period was surprising Justin with a visit to Lincoln. It was Halloween weekend during his freshman year. Matt, his brother, and Drew, our friend, had planned to go down and visit him. Somehow we came up with the plan that I would ride along with them, and not tell Justin that I was coming. (Looking back, this could have been dangerous and on the ride down we joked about how I would show up and Justin would have another girl in his room. Thankfully, this didn't happen.) They showed up, knocked at his door, and said there was a surprise waiting for him in the hallway. It was me! The look on his face was priceless, and we spent the weekend dressing up in costumes and having a great time!

Homecoming 2007
After what seemed like an eternity, I graduated high school and joined Justin down in Lincoln for college. It was definitely an adjustment living in the same town again. We got on each other's nerves more than once, but for the most part it was amazing just to be able to do the small things together like grabbing lunch or having Sunday $.25 tacos.

We got to experience more Halloween parties together, take some classes together, and go on trips together. We visited Florida twice (once with my family and once for a spring break trip), Kansas City a few times, Colorado, and Okoboji every year with Justin's family. I fell in love with Colorado during our trip there and have been dying to go back ever since. Hopefully it will happen soon! Our Okoboji trips are always fun. You can't go wrong with getting to spend a week on the water every summer boating, tubing, wakeboarding, swimming, and (now that we're old enough) exploring the local drinking establishments.

The Engagement Years
In March 2012, we decided we wanted to take a road trip for Justin's birthday and over my spring break. We chose to go to Minneapolis because it was within driving distance, I had never been there before, and Justin hadn't gone since he was little. So off we went!

We had moved in together in August of 2011, so I knew things were getting pretty serious. Plus, we had talked a lot about our future and getting married, so the proposal itself didn't come as a huge surprise. However, I totally didn't expect it on this trip. From what Justin tells me, the timing wasn't something he thought a lot about. He decided it was time to pull the trigger the week before the trip, bought the ring in Sioux City before we left, and waited until the last possible moment to ask me before we left Minneapolis. But, I wouldn't have had it any other way because that's so Justin and I love it.
Engagement day...so happy!
We set the wedding date, I graduated from UNL in May 2012, and I went full on into planning mode. It was a crazy two years after that. I started law school, Justin started a part-time job to help us pay for the wedding, and we were both crazy busy. It could have been a divisive time for any couple, but it seemed to bring Justin and I closer together. We bonded when there were challenges to face, and because of our busy schedules, we cherished the time we did have together that much more. Little things like going to dinner and a movie became that much more rare, so when they did happen we truly enjoyed them. Our trips to Okoboji during those two years were even more special as well because we were able to spend an entire week together uninterrupted by work, school, or anything else that tended to get in the way.

In October of 2013, we had our engagement session. Again, this was one of those special occasions where we were able to have a "date night" while getting some great pictures in the mean time. We went to James Arthur Vineyard near Lincoln for the first half of the pictures. We've been there a few times and really enjoy it. It's in the country and is always a peaceful, fun experience.

To be honest, I didn't know how the pictures would turn out. Before we left, Justin was in a bad mood, I was stressed out, and we had a pretty big fight. Let's just say we weren't feeling the happiest with each other at that time and we definitely didn't feel like cuddling or kissing. But just taking a few hours to ourselves and thinking about our upcoming wedding and the love we have for each other even during our worst moments really solidified our bond and commitment to one another.

In January 2014, we were fortunate enough to purchase our first home. It's a 2 bedroom/1 bathroom and it just works perfectly for us right now. There's enough room for guests, ourselves, and our two dogs. Also, we've already tested out its house party ability, and it works pretty good for that as well! I love thinking of new decorating ideas and ways we can improve our home. This summer the major project has been the back yard. In July, with the help of Matt and Mallory, we were able to get the rest of the yard fenced, the back fence line cleaned out, and my garden a bit more organized. There is still a lot of work to do, and next summer hopefully we will be able to finish cleaning up the back fence line, put up a retaining wall, and install a better fence.

The Married Years
On May 31, 2014, the day I had been waiting for for YEARS finally happened. It was such a special day where we finally made our relationship "official". Looking back, our long relationship was really a training that enabled us to make our commitments with full hearts, having already tested most of the vows.

"...I give my all to you.
My support for your achievements,
my counsel for your problems, my remedies for your ills,
my prosperity for yours, my shoulder for your tears,
my ear for your voice, my hand for companionship
and my embrace to simply feel our love..."

Okoboji 2014
I must be one of the luckiest people in the world. I've gotten to spend the last eight years with one of the most selfless, hard-working, and loving people on this planet. Looking back and seeing how our relationship has grown and evolved over the years truly is amazing. It hasn't been perfect; we've had our fair share of good and bad, ups and down, but I wouldn't trade what we have for anything in the world.

I'm so looking forward to what is in store for us in year nine. Love you Justbabe, and happy "anniversary". =)

My Go-To Crock-Pot Recipes

In an attempt to plan my meals for this week, I came to realize that my crock-pot can be a lifesaver when it comes to easy, hot meals. The only downside is that most recipes do require a bit of foresight, so I thought I would post some of my favorite recipes in case anyone is in need of a good meal idea this week. I make no promises that these recipes are the most healthy of options, but they have to be better than a burger and fries right?

My awesome crock-pot.  Bridal shower gift from Lex!

Chicken (Various Flavors)
This "recipe" can be altered in a variety of ways. My favorite is BBQ, but Justin's is Buffalo. Sometimes I will just cook the chicken in the slow cooker and then we can add our own sauces. Below is the recipe I used most recently:

BBQ Crock Pot Chicken
  • 2-?? Chicken Breasts (fresh or frozen)
  • Your favorite BBQ sauce (amount will vary according to how many chicken breasts)
Trim any fat off the chicken breasts and throw them into the crock pot. Cook on high for 2 hours or low for 4 hours. Drain any liquid out of the crock pot. Top with BBQ sauce to coat. Cook for another 30 minutes on high or 1 hour on low. Shred chicken.

I used this chicken to make wraps with cheese and lettuce, topped with additional BBQ or ranch. However, it's super versatile. You can simply put it on a bun and call it good, use it to make BBQ chicken pizza with grilled onions, cilantro, and mozzarella cheese, or toss it on a salad. I love this recipe for game day or big family gatherings because you can make as much or as little as you want and it really doesn't take any more effort!

Flavor alterations can include substituting the BBQ sauce for Frank's Red Hot, this tomato basil recipe, or this pesto ranch version.

Bean-less Chili

So, I'm not a big fan of beans (I know they are good for you, but I just can't get past the texture), so I've always been in search of a good bean-less chili. I stumbled upon this one at SparkPeople, tried it, loved it. Of course, if you do like beans, feel free to throw in a can of red ones!

  • 1 lb lean ground beef (or ground turkey)
  • 1 cup diced celery
  • 1 28 ounce can crushed tomatoes
  • 1 small can diced green chilies
  • 1/4 cup chopped raw onion
  • 1/2 tsp salt
  • 1 tsp Cayenne Pepper
  • 3 tsp ground Cumin Seed
  • 6 tsp Chili powder
Cook the ground beef/turkey until no longer pink and drain. Throw all ingredients into the crock pot. Cook on high for 2 hours or low for 4-6 hours. So simple!

This is really good for a cool evening and I love the leftovers as a topping for a baked potato. Yum!

Cream Cheese Chicken Chili

This is a recipe I received from Justin's cousin and her daughter at one of my bridal showers. I've only had it once, but it was amazing and I am going to have to make it again soon!
  • 4 frozen chicken breasts
  • 2 cans of Rotel tomatoes (I like the hot variety but I know they also have original or mild)
  • 2 cans of corn, undrained
  • 2 cans of black beans, rinsed & drained (not a fan of beans-I use 1 can instead)
  • 2 packets of ranch dressing mix
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • 2 packages of cream cheese (8 oz/each)
Put chicken, Rotel tomatoes, corn, black beans, ranch seasoning, chili powder, and cumin into crock pot on high for 4 hours or low for 6 hours. If you are home, stir occasionally, but if you aren't it will still be fine. Thirty minutes before you are ready to eat, shred chicken, add cream cheese, stir until incorporated, and continue to cook for remaining 30 mins. Make sure cream cheese is melted, then serve and enjoy!

This next recipe I haven't tried yet, but it sounds delicious and really easy!

In the bag:
  • 2 cups chopped carrots
  • 2 cups chopped bell peppers
  • 1 lb chicken breast, cubed
  • 3 cloves garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 8 oz orange juice concentrate
Combine all ingredients and freeze until ready to eat. Cook on low in crock pot 4-6 hours. You can garnish the completed meal with clementine slices if desired. Serve over rice or with a bag of stir fry veggies for an added health kick.

So there you go! I hope that was helpful. I know it gave me more motivation to break out the crock pot this fall!

-Emily

P.S. Sorry for the screwy layout on this. This template automatically centers everything so I couldn't get the ingredient lists to be left aligned with the bullet points like I wanted. Hopefully it's still readable.

2014 Weddings

This year has been crazy all around, but the wedding scene has been especially busy! I'm pretty sure we don't know of anyone planning to get married in the last few months of the year, so I thought I'd give a little recap of the ones we attended! This year we were invited to 9 weddings during the months of May, June, July, August, September, and October.  We were only able to make it to 6 due to Justin's crazy work schedule, but they were all a blast!

May 24, 2014-Ryan & Kelsie
Ryan is a coworker of Justin's at Union Bank. Quite a few people from Union Bank were going, so we thought it would be nice to have a fun night out and get away from the stress before our big day. The ceremony and reception were in Fremont. Because we got a late start, we decided to just go to the reception. It was a lot of fun and one of my favorite parts was the bridesmaid's speeches. They turned it into the rap from Fresh Prince of Bel Air, customized with part's of the couple's history. So cool!!

May 31, 2014-Us!
Eventually I will probably do a post about my wedding day, but today is not that day! I will just say that it was more than I could have ever asked for, and I'm still so in awe of the amount of love we experienced that day.

July 12, 2014-Brett & Kyna
Justin and I went to high school with Brett, so it was pretty cool to be able to watch him get married! The wedding was at Blessed Sacrament in Sioux City. I had never been in that church before, but it is truly beautiful. The reception was at the Marina Inn Conference Center in South Sioux. A ton of our friends from high school were there, and we had a great night dancing away!

I bought a new dress from Target for this wedding, which I thought was super cute, but looking back in pictures, it's a really busy pattern. I might pair it with a plain sweater or blazer to tone it down so that I can wear it to work in the future. Poor Justin...we like to match or coordinate when we go out (yes we are one of those lame couples) but it seems like whenever I pick out a dress the only shirt that goes the best with it is his navy blue one. So I think he's worn that shirt for a majority of the weddings we went to this summer. Hey, at least he looks good in it! =)

 August 9, 2014-Raf & Bobbie Jo
Rafael (Raf) is one of Matt's (Justin's brother) friends from high school. However, Justin has known him since he was younger and I got to know him through Justin and Matt. Bobbie Jo is so sweet and the two of them are a perfect match! Their wedding was also at Blessed Sacrament church and they had their reception at Emma's Event Center in Sioux City.

The wedding and reception were both very beautiful as they incorporated some Hispanic traditions into both. The ceremony featured 13 gold coins given as a symbol of the groom's promise to provide for his family and the bride's trust in his ability to do so. The reception had a mariachi band playing for a portion of it, which was something really unique!

 August 24, 2014-Eric & Ashley
I've known Eric since high school. Then in college, he lived with Justin for years. Eric's always been someone I could count on whether it be discussing politics after a few drinks or helping me put on my license plates when Justin was at work. When he and Ashley began dating, and she started spending more and more time at the house on Knox Street, we really got to know each other and quickly became close friends. I was so honored when she asked me to be a part of her wedding as a bridesmaid. (And I know Justin felt the same way about Eric asking him).

Their wedding took place at Blessed Sacrament as well, and their reception was also at Emma's Event Center. Their colors were red, white, and charcoal. Their wedding was so beautiful and emotional (for me anyway). We had such a great time, and we're so excited for all of our future adventures with this couple. Next up, Vegas in May 2015.

So handsome!

September 20, 2014-D'Angelo & Molly
I've known Molly since the second grade when we were both in Mrs. Schultz's class. We've been friends ever since, and I'm so glad. I was so happy when she told me she was engaged to D'lo because I remember when we were young we would talk about our future husbands, how many kids we would have, and what our weddings would be like. Now, she was going to be able to plan her dream wedding! And what a dream it was.

The ceremony was outdoors at the Marina Inn terrace overlooking the gardens and Missouri River. With the sun going down and a light breeze, it was perfect. The reception was held at the Marina conference center. I loved the mums as centerpieces on some of the tables. They were a perfect complementary color and a great late summer/early fall element. It was so great to get to hang out with all my friends and dance the night away. It's crazy how we are all growing up, but it's awesome to see everyone doing so well and living amazing lives!

Me with the beautiful bride

October 3, 2014-Brandon & Katie
On Friday we went to the wedding of our friends Katie and Brandon. We've both known Katie for a few years, having worked with her at Outback. Over the years, we've gone on numerous double dates, even if that meant late night apps and drinks at Applebees. They've become great friends, and it was amazing to witness the love they share between them as they became husband and wife.

Their wedding was at a beautiful country setting called Country Pines. Although it was a little chilly, heaters in the reception area kept things nice and toasty. Katie put in a lot of hard work ensuring everything was perfect. And it was! From the hay bales and wooden arch at the ceremony, to the twine wrapped bottles and burlap table runners at the reception, the amount of time and careful planning was evident. Everything was beautiful! One of my favorite parts was the photobooth. It was the same company we had at our reception, so maybe I'm a little biased.

As you can see, it was a busy wedding season for us, but I wouldn't have had it any other way. For me, attending weddings and listening to all of the different sermons and vows provides a new opportunity to think about my own marriage, and how I can work to be a better wife. Life gets stressful, and sometimes it's easy to put relationships on the back-burner, but that's no place for them.  One of my favorite sermons was when Father reminded us that we spend all day at work being patient and kind to those we interact with, but when we come home all too often our spouse is the first one we snap on. Why are we so quick to anger at the one we are supposed to love the most? It was a great reminder that "love is patient, love is kind", and we owe our spouse at least the same amount of courtesy we extend to people we don't even know. Congratulations to everyone who got married this year; I'm wishing you nothing but years of happiness!

This post is a long one, but I wanted to have a place with all the weddings in one place so I can come back to them and remember the details if I wanted! Thanks for reading!

Thirsty Thursday

After a pretty crazy Wednesday,  (woke up to water in the basement and not nearly enough fans and Archie started his first obedience class!) I decided pretty early today that I was going to need a drink this evening...probably to be enjoyed while I binge watch shows during the best night on television. I mean, who doesn't want to spend three hours of their night watching Grey's Anatomy, Scandal, and How to Get Away with Murder?

So I had intended to make a cool new drink at home using one of my wedding shower gifts: a book called "Ultimate Bar Book". Basically, it's filled with hundreds upon hundreds of drink recipes...many of which I am dying to try out so I wouldn't have to look very far to come up with a drink that was new, different, and exciting. However, that plan got derailed by Justin's work health fair that I had promised I'd go to with him. It was pretty fun and we learned about a lot of cool places in Lincoln that provide healthy meal options on the go! Anyway, after we were done there we decided to just go grab a drink at Sportscasters. I ordered a Malibu & Pineapple, which was delicious, but wasn't as satisfying as if I would have made and tried a new drink. Maybe next time! Here's the drink I was planning to make at home:

Bay Breeze
2 ounces light rum
3 ounces cranberry juice
1 ounce pineapple juice

Sounds delicious right?

Here's what I've got coming up that I'm super excited about. One or some of these might just get turned into a post!

1. One of my good friends is getting married tomorrow! Katie and I met working together at Outback and I couldn't be more happy for her to marry Brandon. It's going to be a beautiful evening.

2. We haven't decided what Saturday morning holds in store for us, but hopefully we will either be going to Roca Berry Farm, a pumpkin patch near Lincoln, or taking the dogs to the lake for a swim. Either way, it should be a fun "date".

3. The Huskers play this weekend!!! They've been doing really well lately, but this will be their first big test, going up against Michigan State, which is ranked 10th. Maybe I'll whip up some game day goodies to enjoy while watching!

4. I'm going to attempt to meal prep on Sunday. I'm not sure what this will include yet, but I hope to be able to have all my meals planned and snacks pre-portioned and ready to go quickly. Hopefully, this will help to curb my last minute runs to Taco Johns when I "can't find" anything at home.

Thanks so much for reading!!
